Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Let’s make it

  1. Heat oven to 350°F (175°C). Grease a 9-inch (23 cm) round, 2-inch (5 cm) deep baking dish with about 1 tsp (5 g) melted butter. Pit and stem cherries, check for remaining pit fragments, weigh about 1 lb (450 g) edible fruit and arrange evenly in the dish.
  2. Whisk eggs, sugar and salt until uniform. Gradually whisk in flour until mostly smooth, then add milk, vanilla and remaining about 3 ⅓ tsp (15 g) melted butter. Scrape all batter over cherries; it will be thin. Do not taste raw batter.
  3. Bake 40-50 minutes until edges are golden, the center is set with only a slight tremble rather than liquid movement, and its temperature reaches 175°F (79°C). A knife inserted between cherries should emerge without raw batter; avoid judging a spot filled with cherry juice.
  4. Cool 25 minutes before cutting eight equal wedges. The top will settle as it cools. Serve warm; refrigerate leftovers within 2 hours, store covered and use within 2-3 days. No topping is needed for the stated recipe.

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. Entire bake divided into eight equal wedges, including all fruit and any juices. Contains wheat, egg and milk. No powdered-sugar dusting, whipped cream or ice cream included.
