Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Let’s make it

  1. Warm oil in a large heavy saucepan over medium heat. Soften onion for 6-8 minutes. Add ginger, garlic and cumin and stir for 1 minute.
  2. Add chicken and stir for 3 minutes; it will not yet be cooked through. Add sweet potato, tomatoes with juice, water and salt. Bring to a simmer, cover partly and cook gently for 18-25 minutes, stirring occasionally.
  3. Check several chicken pieces reach 165°F (74°C) in the center and sweet potato is tender. Whisk peanut butter with a ladle of hot broth in a bowl, then stir it back into the pot. Add spinach and simmer 3-5 minutes until wilted and the stew is hot throughout.
  4. Divide chicken, vegetables and broth evenly among four portions. Refrigerate leftovers in shallow containers within 2 hours, use within 3-4 days and reheat to 165°F (74°C), stirring to distribute heat. Check peanut butter, canned tomatoes and spices for milk, gluten or other additions relevant to the tags.

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Profiles match raw edible produce and proteins, dry grains and flour, drained canned beans, tomatoes with juice, plain whole-milk yogurts and specified cheese. All listed oil and retained cooking liquid are counted. Cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero.
