Gently cooked shrimp are chilled and folded into a tomato-lime mixture with cucumber and avocado.
Ingredients
Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.
Let’s make it
- Bring a wide pot of unsalted water to a gentle simmer. Prepare a large bowl of clean ice water separately. Add shrimp and cook 3-5 minutes, stirring gently, until opaque and pearly throughout and the thickest parts reach 145°F (63°C).
- Lift shrimp directly into the ice bath for 3-5 minutes until cold. Drain well, pat dry with clean paper towels and cut larger shrimp into two or three pieces. Discard poaching and chilling water.
- Mix tomatoes and juices, cucumber, ketchup, lime juice, onion, cilantro, salt and pepper in a bowl. Fold in cold shrimp, cover and refrigerate 30 minutes at 40°F (4°C) or below.
- Fold in freshly diced avocado just before serving and divide all solids and sauce among four bowls. Serve cold. Refrigerate within 2 hours, or 1 hour above 90°F (32°C), and use within 2 days for texture. Lime juice does not replace cooking or refrigeration.
