Let’s make it

  1. Heat oven to 400°F (200°C). Toss tomatoes, olives, oil, garlic, and oregano in a baking dish.
  2. Roast the tomato mixture for 10 minutes.
  3. Season cod with salt and pepper and nestle into the dish. Bake for 12–18 minutes until the thickest part reaches 145°F (63°C).
  4. Serve the fish with the roasted tomatoes, pan juices, and lemon wedges.
