  1. Heat oil in a large pot over medium heat. Cook onion, carrot, and celery for 7 minutes.
  2. Add broth, thyme, salt, pepper, and whole chicken breasts. Bring to a gentle simmer.
  3. Simmer partly covered for 15–20 minutes until chicken reaches 165°F (74°C). Remove to a clean plate.
  4. Add noodles to the broth and cook according to their package timing. Shred the chicken with two forks.
  5. Return chicken to the pot, heat through, and stir in parsley. Add a little water if the soup is thicker than you prefer.
