Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Let’s make it

  1. Heat 0.705 oz oil in a wide heavy saucepan over medium-high heat. Add mushrooms and cook 7-9 minutes, stirring occasionally, until released moisture evaporates and edges brown.
  2. Lower heat to medium. Add remaining 0.353 oz oil and onion; cook 4-5 minutes until softened. Stir in garlic, thyme and dry orzo for 1 minute.
  3. Add water, salt and pepper and bring to a simmer. Cook uncovered 8 minutes, stirring across the bottom frequently. Add frozen peas and cook 3-5 minutes more until orzo is tender and peas are hot. Add water 1.06 oz at a time if the pan dries before the pasta is ready; do not drain.
  4. Remove from heat and stir in lemon juice. Rest 2 minutes, leaving the sauce a little loose because it thickens as it stands. Divide into four equal portions. Refrigerate in shallow containers within 2 hours, use within 3-4 days and reheat to 165°F (74°C) with a little water.

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Profiles match raw edible produce and proteins, dry grains and flour, drained canned beans, tomatoes with juice, plain whole-milk yogurts and specified cheese. All listed oil and retained cooking liquid are counted. Cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero.
