Raspberry & chia refrigerator spread
Whole raspberries cooked briefly with maple syrup, then thickened with hydrated chia seeds and chilled.
Ingredients
Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.
Let’s make it
- Put raspberries, maple syrup and water in a small saucepan. Cook over medium-low heat for 6–8 minutes, stirring and crushing berries with a spoon until juicy and mostly broken down.
- Stir in lemon juice and all chia seeds, scraping the pan corners to disperse them. Cook gently 2 minutes, stirring; do not reduce to a sticky candy-like paste.
- Transfer the complete mixture, including all raspberry and chia seeds, to a shallow heatproof container. Stand 15 minutes, stirring twice so the chia does not clump.
- Cover and refrigerate at least 60 minutes until the seeds are hydrated and the spread is thick enough to mound softly on a spoon. Longer chilling is fine; it remains a seeded fruit spread rather than a clear jelly.
- Divide into 12 equal portions. Keep refrigerated and use within 3–4 days. This low-sugar fruit-and-seed preparation is not a tested canning recipe and is not shelf-stable. No straining or seed discard is included.

Calculation notes & sources
ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. Twelve equal shares; no measured jar volume or finished weight. Maple and fruit sugars counted. No pectin-jam equivalence or preservation claim. Vegan/Gluten-Free/Dairy-Free depend on pure ingredients and preparation cross-contact.
