Roasted carrot & white bean spread
A mellow orange spread with sweet roasted carrots, creamy white beans and lemon.

Let’s make it
- Heat the oven to 400°F (200°C). Toss the carrots with the olive oil, cumin and salt on a rimmed baking sheet. Roast for 20 minutes, then turn and add the whole garlic cloves.
- Roast for another 10–15 minutes until the carrots are very tender. Scrape the vegetables and all tray oil into a shallow bowl and cool for 10 minutes.
- Put the drained beans, roasted vegetables, lemon juice and water in a food processor. Process until creamy, pausing to scrape the bowl. Do not blend hot ingredients in a sealed personal blender.
- Divide into eight equal spread portions. Serve with optional accompaniments, which are not included in nutrition. Cover and refrigerate promptly; use within 3–4 days at 40°F (4°C) or below.
