Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Let’s make it

  1. Bring water to a boil in a kettle. Steep saffron in 1.76 oz hot water for 10 minutes; keep remaining 29.98 oz water hot. Heat oil in a wide 12-inch (30 cm), roughly 3-quart (2.8-liter) shallow skillet over medium heat. Cook onion, pepper and green beans 8-10 minutes, stirring.
  2. Add garlic and paprika for 30 seconds, then tomato and all juices. Cook 6-8 minutes until the tomato mixture thickens. Stir in dry rice for 1 minute. Add saffron water, remaining 29.98 oz hot water and salt. Scatter in cannellini beans, level the rice and bring to a steady simmer.
  3. Cook uncovered 20 minutes over medium-low heat without stirring, rotating the pan occasionally if the burner heats unevenly. Scatter peas evenly over the surface and continue 8-12 minutes until rice is tender and visible liquid is absorbed. If dry before rice is tender, add plain boiling water in 1.06 oz increments around the edges and continue; rice brands vary. Reduce heat if the bottom smells scorched.
  4. Remove from heat, cover loosely and rest 10 minutes. Scatter parsley, then divide the entire pan into four portions, including any lightly toasted rice that releases easily. Do not scrape burnt black rice into servings. Refrigerate leftovers promptly in shallow containers within 2 hours, use within 3-4 days and reheat to 165°F (74°C).

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. All rice, vegetables, beans and oil divided equally among four servings. Plant-only ingredients support vegan/vegetarian and dairy-free criteria; check canned beans and spices for gluten/cross-contact. Vegetable and legume bulk with olive oil as sole added fat meets the documented Mediterranean-style ingredient screen; no authenticity or health-outcome claim.
