Let’s make it
- Bring the 2.2 lb water to a boil in a medium saucepan. Add the frozen shelled edamame and cook for the time directed on the packet, usually 4–6 minutes, until tender and hot throughout. Do not serve frozen edamame merely thawed.
- While the water heats, toast the sesame seeds in a small dry skillet over medium-low heat for 2–3 minutes, stirring frequently, until pale golden and fragrant. Tip onto a plate.
- Drain the cooked edamame thoroughly and let excess steam escape for 1 minute. Toss with the sesame oil, lime juice, lime zest and salt.
- Fold in the scallions and toasted sesame seeds. Divide equally among 4 snack bowls and add one lime wedge to each. Serve warm; refrigerate any leftovers in a covered shallow container within 2 hours, or 1 hour if the room or outdoor temperature exceeds 90°F (32°C).
