Instructions

  1. Toast the bread until crisp and golden. Let it cool for 1 minute so the cream cheese stays thick when spread.

Avocado toast is quick enough that its small timing choices become the main technique. Bread should be crisp before topping, briefly cooled so the cream cheese stays thick, and assembled just before eating. This ten-minute recipe makes two large toasts from 120 g sourdough, 60 g cream cheese and about 180 g avocado flesh. It uses slices of avocado rather than a mashed spread.

Choose bread and avocado that can support the layers

Use two large sourdough slices of roughly similar thickness so they toast at a comparable pace. Very uneven slices make one portion brittle while the other remains soft. Check that each fits the toaster or your usual toasting setup without forcing it into place. The stated 120 g is the total bread weight, not the weight of each slice.

Choose a ripe avocado that yields gently without feeling collapsed or heavily bruised. A hard avocado will not fan into tender slices simply because it receives lemon juice. Wash and dry the whole fruit before cutting; the peel is discarded, but the knife passes through its surface. Set out a stable board, spoon and sharp knife before the bread is ready.

Toast thoroughly, then pause for one minute

Toast the sourdough until golden and crisp. Pay attention to the center as well as the crust: a dark edge around a soft middle gives little support to the topping. Keep the slices separate after toasting so steam does not become trapped between them. Stacking warm bread can soften the surfaces you just worked to crisp.

Allow the specified one-minute cooling interval before spreading the cream cheese. You are aiming for warm toast that does not immediately turn the topping loose. This is a brief pause, not a long wait until the bread is cold. Use it to finish the avocado preparation and arrange the two plates so assembly can move straight to serving.

Slice safely and use the lemon juice evenly

Halve the avocado, remove the pit carefully and lift the flesh out with a spoon. Keep the fruit supported on the board during knife work, and avoid striking a pit with a blade held toward your hand. Once removed from its skin, lay each avocado half flat-side down for stable, controlled slicing.

Cut thin slices that can overlap without becoming fragile ribbons. Drizzle the measured 10 ml lemon juice across the exposed flesh, distributing it between both halves. Lemon contributes acidity and helps limit surface discoloration, but it is not a replacement for immediate assembly. Do not leave the slices swimming in an extra pool of juice that will run onto the bread.

Spread the cheese before moving the avocado

Divide the cream cheese into two 30 g portions. Spread each over a toast with a rounded knife, supporting the bread gently instead of pressing hard enough to break it. A reasonably even layer gives the avocado something to settle against. Leave a narrow edge if that makes the slice easier to pick up without getting topping on your fingers.

Slide the flat of a knife or a small spatula beneath the avocado slices and move them as a group, then ease them into a fan. Work slowly if the fruit is especially soft. If a few slices break, place them into gaps; there is no need to discard edible pieces in pursuit of a perfectly symmetrical arrangement.

Season across the whole surface and eat promptly

Divide the black sesame seeds, salt and pepper between both toasts, scattering from a little height so they spread rather than fall in one patch. The smooth avocado can make a concentrated clump of salt especially noticeable. Keep the seed quantity measured: it is a small crisp accent, not a thick crust covering the entire avocado surface.

Serve one toast per person immediately. A knife and fork may be easier than lifting a heavily topped slice, especially with soft avocado. If preparing for different eating times, toast and assemble each portion close to when it will be eaten. Holding completed toast turns the crisp base softer and leaves cut avocado exposed longer than necessary.

Why does my cream cheese slide around on the toast?

The bread may still be too hot or the topping may be unevenly piled. Give the toasted slices the one-minute cooling interval, then spread 30 g cream cheese evenly on each before adding avocado.

Can I slice the avocado well in advance?

This recipe is designed for immediate assembly. Lemon juice helps with discoloration but does not make an exposed avocado fan a long-holding component. Prepare the toast and avocado close to serving.
