  1. Squeeze the grated onion in a clean towel to remove excess juice. Mix it with the beef, garlic, 0.529 oz parsley, cumin, coriander, paprika, 0.141 oz salt and pepper just until evenly combined.
  2. Divide the mixture into eight portions. With damp hands, press each portion around a flat metal skewer into an even sausage about 2 cm thick. Refrigerate for 10 minutes while heating the grill to medium-high.
  3. Toss the red and yellow tomatoes, sliced red onion, mint and remaining 0.353 oz parsley with the lemon juice, 0.353 oz olive oil and remaining 0.0705 oz salt.
  4. Brush the kofta lightly with the remaining 0.176 oz oil. Grill for 10–12 minutes, turning every 2–3 minutes, until well browned and 160°F / 71°C in the center of several skewers.
  5. Arrange the tomato-onion salad on a platter and place the kofta above it. Serve two skewers per person, warning diners that the metal skewers are hot.

Kofta needs enough cohesion to stay on the skewer without becoming a densely packed sausage. This 40-minute recipe uses 600 g ground beef for eight skewers, served over tomato-onion salad. Its small details are important: squeeze the grated onion, use flat metal skewers and keep the meat about 2 cm thick. The salad can be prepared during the brief chilling stage so cooking gets your full attention.

Remove excess onion liquid before mixing

Grate the 100 g onion and squeeze it in a clean towel to remove excess juice. This is different from simply chopping an onion: grating spreads the onion throughout the beef, while squeezing prevents its free liquid from making the mixture unnecessarily loose. Keep the separate 80 g red onion for the salad in slices.

Combine the squeezed onion with beef, garlic, 15 g parsley, cumin, coriander, smoked paprika, 4 g salt and pepper. Mix just until the seasoning and onion are distributed. Large clumps of herbs or onion can create weak points. Stop once the mixture is uniform rather than repeatedly kneading it in pursuit of a perfectly smooth paste.

Shape eight even portions on flat skewers

Divide the mixture into eight portions before shaping, then dampen your hands lightly. Press each portion around a flat metal skewer into a sausage about 2 cm thick. Look for continuous contact along the metal and close any obvious cracks. A thick lump in the center will cook differently from thin tapered ends.

Lay the skewers on a tray and refrigerate for 10 minutes while the grill heats to medium-high. The short chill helps make the prepared skewers easier to handle. Keep the raw-meat tray separate from the serving platter and prepare clean tongs or a clean handling surface for after cooking.

Build a salad with distinct tomato wedges

Combine 300 g red and 300 g yellow tomato wedges with sliced red onion, mint and the remaining 10 g parsley. Toss with lemon juice, 10 g olive oil and the last 2 g salt. Use a broad bowl so you can turn the wedges gently instead of mashing them with repeated vigorous stirring.

Tomatoes release juice once cut and salted, so make this close to grilling rather than leaving it dressed for hours. Some juice is welcome beneath the kofta; an excessive puddle can be left in the mixing bowl when arranging the platter. Keep this ready-to-eat salad well away from the raw beef tray and its utensils.

Turn carefully and check more than one skewer

Brush the kofta lightly with the remaining 5 g oil and grill for 10–12 minutes, turning every 2–3 minutes. Support the meat when lifting if necessary rather than twisting a skewer through a piece that is sticking. Frequent controlled turns expose each face without dragging fragile meat back and forth over the grate.

Ground beef needs a center temperature of 160°F / 71°C. Check several skewers, particularly thicker ones, and position the probe in the meat without resting it against the metal. The skewer itself becomes very hot and can distort what you are trying to measure. Browning, grill ridges and a firm exterior do not replace the center check.

Serve two skewers per person with a hot-metal warning

Arrange the tomato-onion salad on a platter and place the cooked kofta above it. Each of the four servings receives two skewers. Tell diners that the metal is hot, or remove the kofta with appropriate utensils before passing plates. Do not reuse the raw assembly tray as a serving tray without washing it.

If a skewer loosens during cooking, support it with a broad turner and continue cooking the meat to the required temperature. Avoid repeatedly squeezing a half-cooked kofta back onto hot metal. Why does the meat slide or spin around the skewer?

Excess onion juice, round skewers or loosely shaped sections can contribute. Squeeze the onion, use the specified flat skewers and press an even layer around them before chilling.

Can the tomato salad be dressed much earlier?

It will become juicier and softer as it sits. For the intended texture, cut the ingredients ahead if useful but combine the dressing near grilling and serving.
