  1. Use the specified already-cooked beans; preparation from dried beans is not included in the 50-minute meal time. Wrap the tofu in a clean towel and press beneath a plate and moderate weight for 15 minutes. Rinse the rice, combine with 1 cup + 12 tbsp + 1.21 tsp water and 0.0353 oz salt in a saucepan, bring to a boil, cover and cook on low for 15 minutes. Rest off the heat, covered, for 10 minutes.
  2. While the rice cooks, heat 0.529 oz olive oil in a wide frying pan. Add the peppers, onion, 0.0705 oz salt and pepper. Cook over medium-high heat for 10–12 minutes, stirring, until the strips soften and lightly brown; transfer to a covered bowl.
  3. Pat the tofu dry and cut into 2.5 cm cubes. Add the remaining 0.529 oz oil to the pan and sear the cubes for 10–12 minutes, turning to brown several sides. Sprinkle with 0.0705 oz salt.
  4. In a small saucepan, combine the black beans, garlic, cumin, 1/2 tsp oregano, 4 tbsp + 0.17 tsp water and remaining 0.0353 oz salt. Simmer for 6–8 minutes until hot and the garlic is cooked, stirring gently.
  5. Fluff the rice and divide among four bowls. Arrange the tofu, beans and pepper-onion strips in separate sections around it. Sprinkle the remaining 1/2 tsp oregano across the rice and tofu and serve.

This bowl is assembled from four components that finish on different schedules: rice, pepper-onion strips, tofu and black beans. The fifty-minute plan works because the beans are already cooked and the rice rests while the skillet stays busy. It uses 600 g extra-firm tofu and 240 g dry white rice for four servings, with each component arranged separately at the end.

Start with cooked beans and a clear stove plan

Measure the 480 g cooked, drained black beans before starting. Dried beans are not a direct replacement at this stage, and their preparation is outside the meal time. Set out a rice saucepan, a small pan for beans and a wide frying pan. A covered bowl will hold the vegetables while the tofu uses that skillet.

Wrap the drained nigari-set tofu in a clean towel and press under a plate and moderate weight for fifteen minutes. While it drains, rinse the rice and prepare the peppers, onion and garlic. Keep the measured seasonings divided by destination so the rice, vegetables, tofu and beans each receive their stated share of salt.

Let the rice cook and rest undisturbed

Combine the rinsed rice with 420 ml water and 1 g salt, bring to a boil, then cover and cook on low for fifteen minutes. Use a snug-fitting lid. Lifting it repeatedly to inspect the grains releases steam and interrupts the conditions this measured-water method relies on. Set a timer so the other pans do not distract you.

Move the covered pan off the heat for its ten-minute rest. This interval belongs in the cooking plan; it is not idle time to cut away because the skillet is ready. Fluff after resting, lifting the grains rather than pressing them. Rice that seems wet immediately after cooking may settle during the covered rest.

Brown the vegetables before cooking the tofu

Heat the first 15 g olive oil in the wide pan and add both colors of pepper, onion, 2 g salt and black pepper. Cook for ten to twelve minutes over medium-high heat, stirring so the strips soften and gain some color. Spread them back out after each stir instead of leaving a mound in the middle.

Transfer the vegetables to the covered bowl when ready. Clearing the pan gives the tofu a chance to contact the hot surface directly. Leaving the peppers underneath would turn the next stage into a crowded mixed sauté. The vegetables should retain recognizable strips, so avoid cooking them to collapse while waiting for the tofu to finish pressing.

Sear dry cubes and warm the beans gently

Pat the pressed tofu dry and cut it into 2.5 cm cubes. Add the remaining 15 g oil and arrange the cubes with space between them. Turn over ten to twelve minutes to brown several faces, using a thin spatula to ease them up when needed. Constant poking can break their corners before a surface has developed.

Sprinkle the tofu with its 2 g salt. Meanwhile simmer the beans with garlic, cumin, half the oregano, 60 ml water and the final 1 g salt for six to eight minutes. Stir gently enough to keep the beans intact. Their small amount of liquid carries the seasonings; it should not become a large broth around the bowl.

Divide the components before the final seasoning

Fluff and divide the rice among four bowls, then portion the tofu, beans and vegetables in distinct sections. Work around all four bowls in turn rather than completely filling the first one from each pan. This makes it easier to distribute the browned tofu and the two colors of pepper evenly without needing an exact cooked weight.

Finish with the reserved half teaspoon oregano across the rice and tofu. There is no additional dressing in the recipe, so avoid expecting the beans to supply a sauce for everything. Serve promptly while the separate components are warm. Any cooked rice and other leftovers should be chilled promptly rather than left in their pans after dinner.

Common questions

Can I start with dried black beans within fifty minutes?

No. The recipe explicitly uses beans that have already been cooked and drained. Prepare dried beans separately ahead of time, then weigh the cooked amount needed for the bowls.

Why does the tofu stay pale?

Check for wet surfaces, a crowded pan or constant movement. Dry the cubes after pressing, remove the vegetables first and leave the tofu in contact with the hot pan between turns.
