Garlic-paprika salmon and tender roasted green beans finished with lemon juice and parsley.
Ingredients
Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.
Let’s make it
- Heat the oven to 425°F (220°C). Pat the green beans dry and toss with 0.529 oz olive oil, 0.0529 oz salt and 0.0088 oz pepper on a large rimmed sheet pan. Spread out and roast for 10 minutes.
- While the beans roast, pat the salmon dry. Mix the remaining 0.353 oz olive oil, 0.0529 oz salt and 0.0088 oz pepper with the garlic and paprika. Spread over the four portions. Wash hands and clean surfaces and utensils after handling raw fish.
- Turn the beans and move them to the sides, keeping them in a loose layer. Set the salmon in the center with space between portions. Roast for 12–16 minutes, checking at 12 minutes, until each portion reaches 145°F (63°C) at the thickest point. If the beans need longer, move the cooked fish to clean plates and return the beans to the oven for a few minutes.
- Divide the beans among the 4 plates. Spoon the lemon juice evenly over the fish and beans and scatter with parsley. Include the pan juices when serving.
- Refrigerate leftovers in shallow covered containers within 2 hours, or 1 hour above 90°F (32°C), at 40°F (4°C) or colder. Use within 3–4 days and reheat to 165°F (74°C).
