Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Let’s make it

  1. Break graham crackers into small pieces about 1/2 inch (1 cm), retaining the fine crumbs. Put chopped chocolate and 5 g cocoa in a heatproof bowl. Heat cream and butter in a small saucepan just until steaming and butter melts; do not boil hard. Pour over chocolate, wait 2 minutes, then stir until smooth.
  2. Fold in all cracker pieces, crumbs and walnuts. Cool for 10 minutes, then refrigerate the bowl for 25–35 minutes until the mixture is thick and moldable but not hard. Stir once halfway so the edges do not set much faster than the center.
  3. Spoon all mixture onto a large sheet of baking parchment and use the paper to form a compact log about 10 inches (25 cm) long and 2 inches (5 cm) across. Wrap firmly, place seam-side down on a tray and refrigerate for at least 4 hours until firm throughout, rolling gently once after the first hour to improve the shape.
  4. Unwrap, dust the exterior with the remaining 5 g cocoa and cut with a sharp knife into 18 equal slices. Serve 2 slices per portion. Keep refrigerated at 40°F (4°C) or below and use within 4 days; return portions to refrigeration within 2 hours of serving. Chilling may take longer in a warm refrigerator.

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. All chocolate, dairy, crackers, nuts and cocoa divided into 18 slices. Contains wheat, milk and walnuts; check cracker/chocolate labels for compatible vegetarian ingredients.
