Coconut & lime shortbread
Buttery square-cut shortbread with fine coconut and fragrant lime zest baked into every bite.

Let’s make it
- Use butter that is soft enough to indent, but not melted. The 150-minute total allows about 30 minutes to soften the butter; allow longer in a cold kitchen. Line a 20 cm square metal baking pan with parchment, leaving handles at two sides.
- Beat the butter, sugar, lime zest and salt for 1–2 minutes until smooth. Stir in flour and coconut until a crumbly dough forms, then press it together. Do not taste raw flour dough.
- Press the dough into an even layer in the prepared pan. Score into 16 equal squares and prick lightly with a fork. Refrigerate for 30 minutes. During the last 15 minutes of chilling, heat the oven to 325°F (165°C).
- Bake for 25–30 minutes, until the surface is dry and the edges are lightly golden. While still warm, carefully follow the scored lines with a knife. Leave in the pan for 15 minutes, then lift the slab onto a rack and cool for at least 30 minutes more before separating the squares. Allow extra cooling if still warm.
- Serve 2 squares per person for 8 portions. The elapsed time includes butter softening, the required chilling and 45-minute cooling. Keep fully cooled shortbread in an airtight container in a cool dry place for up to 4 days.
