Cod, corn & potato chowder
Tender cod chunks, corn and potato in a lightly thickened milk broth with onion and thyme.
Ingredients
Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.
Let’s make it
- Warm oil in a heavy saucepan over medium heat. Cook onion for 7-8 minutes until soft without browning. Add potatoes, water, thyme and salt. Bring to a simmer and cook partly covered for 12-15 minutes until potato cubes crush easily against the pot.
- Mash about one quarter of the potatoes into the liquid with a fork or potato masher. Stir in frozen corn and milk. Return to a gentle simmer for 5 minutes, stirring and scraping the base; avoid a hard boil.
- Slide in the cod and simmer gently for 6-10 minutes, moving the pot rather than stirring vigorously, until the thickest pieces reach 145°F (63°C). Add pepper and divide fish and broth evenly among four bowls. Refrigerate leftovers within 2 hours in shallow containers, use within 3-4 days and reheat gently to 165°F (74°C).

Calculation notes & sources
ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Raw or dry food profiles match pre-cooking edible masses. All listed oil and retained cooking liquid are counted. Cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions define yield; counted biscuits, eggplant rolls, loaf slices and custard cups are explicitly divided. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero.
