Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Let’s make it

  1. Refrigerate the processor bowl briefly. Pat the cod dry and cut into chunks. Process with the egg, cream, cornstarch, parsley, 2 g salt and ½ g pepper into a smooth paste, scraping down as needed. Do not strain or taste raw. Cover and refrigerate for 30 minutes.
  2. Meanwhile, warm the oil in a wide 4-quart saucepan. Cook the onion gently for 8 minutes, then add the garlic for 1 minute. Add tomatoes, broth, remaining salt and pepper. Simmer gently for 15 minutes.
  3. With two wet spoons, divide the cold mixture into 20 oval dumplings of about 33 g. Lower half into barely simmering broth. Poach gently for 8–12 minutes, turning once carefully, until a thin thermometer inserted into the center reaches at least 160°F (71°C). Transfer to a covered warm bowl with some broth; repeat with the rest. Return all dumplings and collected broth to the pan and bring back to serving heat without a rolling boil.
  4. Add the basil and divide all dumplings and broth among four bowls. Refrigerate leftovers promptly in shallow containers within 2 hours; use within 3–4 days and reheat to 165°F (74°C).

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. The estimate counts all cream, egg, starch, oil and broth. Choose gluten-free cornstarch and broth; brands vary. Contains fish, milk and egg.
