Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Let’s make it

  1. Heat the oven to 325°F (165°C). Set four 8-ounce (1 cup + 0.69 tsp) ovenproof ramekins in a deep roasting pan. Warm milk and lemon zest in a saucepan until steaming but not boiling. Whisk eggs and sugar gently in a bowl without whipping in foam.
  2. Whisk a little warm milk into the eggs, then gradually whisk in the rest. Stir in vanilla. Strain through a fine sieve into a jug and divide equally among the ramekins. Set the roasting pan on the oven rack and carefully add hot water to halfway up the sides of the ramekins.
  3. Bake for 30-40 minutes until the edges are set and centers tremble gently, with a center temperature of 160°F (71°C). Remove ramekins from the water bath using suitable heatproof grips and cool on a rack for 20-30 minutes. Refrigerate within 2 hours and chill at least 2 hours before serving. The 210-minute total includes cooling and chilling.
  4. Serve one cup per portion without uncounted toppings. Keep covered in the refrigerator and use within 3-4 days. Fine zest is strained out but all 0.141 oz is included in the conservative nutrition calculation; exact infused or removed amounts are not measured.

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Raw or dry food profiles match pre-cooking edible masses. All listed oil and retained cooking liquid are counted. Cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions define yield; counted biscuits, eggplant rolls, loaf slices and custard cups are explicitly divided. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. Primary-data limitation: USDA whole-milk record 172217 reports 5.05 g total sugars and 4.78 g total carbohydrate per 100 g. The independent published fields are retained without silently altering either; this produces a small cross-field discrepancy in this milk-rich custard estimate.
