Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Let’s make it

  1. Arrange four shallow 5-fluid-ounce (10 tbsp + 0.43 tsp) heatproof dessert dishes on a tray. Use dishes about 3 1/2 inches (9 cm) across so the filling is no deeper than about 3/4 inch (2 cm).
  2. Combine cream and sugar in a 2-quart (2-liter) saucepan. Heat while stirring until sugar dissolves and a controlled boil begins. Boil gently but continuously for 5 minutes, stirring often and adjusting heat to prevent foaming over or scorching.
  3. Remove from heat and stir in the measured lemon juice. Cool 15 minutes, stirring once, then divide evenly among the four dishes without straining. Refrigerate promptly for at least 4 hours until softly set; larger or deeper dishes may take longer.
  4. Once cold, cover and keep refrigerated at 40°F (4°C) or below. Divide the zest evenly over the four desserts just before serving. Use within 3 days; do not freeze. The stated total includes the minimum chilling period.

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Each ingredient retains its primary food description and state. All listed ingredient masses are counted; cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions or explicitly counted items define the stated recipe yield. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero. All cream, sugar and juice divided into four portions; evaporation during boiling affects final mass but no nutrient loss is invented. Brand fat content varies within the stated range. Contains milk; no dairy-free or vegan tag.
