Ingredients

Volumes are approximate. For baking, use a scale; Metric keeps the specified gram weights.

Instructions

  1. Rinse quinoa in a fine-mesh sieve until the water runs clear and drain. Combine with 15.87 oz water and salt in a heavy saucepan. Bring to a simmer, cover and cook gently for 15 minutes.
  2. Stir the canned coconut milk before weighing it so cream and liquid are combined. Add all 8.47 oz to the quinoa. Simmer uncovered over low heat for 8-12 minutes, stirring frequently, until grains are tender and the mixture is creamy but spoonable.
  3. Remove from the heat, stir in maple syrup and rest 5 minutes. Divide into four equal bowls and distribute all 11.29 oz fresh mango evenly over them. No coconut flakes or nuts are included. Refrigerate leftovers promptly within 2 hours and use within 3-4 days; keep mango separately when practical. Reheat porridge to 165°F (74°C).

Calculation notes & sources

ESTIMATED per serving. Brand, crop, preparation, draining, pan residue and substitutions change actual nutrition. Not laboratory analysis. Raw or dry food profiles match pre-cooking edible masses. All listed oil and retained cooking liquid are counted. Cooking moisture changes do not change the stated portion count. No generic nutrient-retention factor is invented. Calories are kcal; protein, total carbohydrate, fat and total sugar are grams. Total carbohydrate includes fiber and is not net carbohydrate. Fiber and sodium are not displayed. Equal portions define yield; counted biscuits, eggplant rolls, loaf slices and custard cups are explicitly divided. US/Metric display changes do not change these canonical inputs. Primary-source supplements are retained per ingredient where USDA lacks a field; missing values are never silently changed to zero.

Quinoa keeps a little grain texture even when cooked into a creamy breakfast bowl. This method softens it first in water, then adds stirred canned coconut milk for the final simmer. Fresh mango goes on at serving so its bright pieces remain distinct rather than disappearing into the hot porridge.

Use a fine sieve for the dry quinoa

Weigh the quinoa dry, then rinse it in a fine-mesh sieve and drain. Ordinary colander holes may let the small grains escape, changing the amount that reaches the saucepan. Rinsing is useful for removing residual surface bitterness, but it does not turn quinoa into a different ingredient with a new serving count. Use plain dry quinoa rather than a microwave pouch or a seasoned blend. Those products contain different amounts of water and may include oil or other additions.

Soften in water before enriching

Put the rinsed quinoa into the measured water with the small amount of salt. Cover for the first gentle simmer and avoid repeatedly lifting the lid. At the end of this stage, the grains should have swollen and started to show their small curved germ rings. There can still be some water in the pan because the goal is porridge, not separate dry grains. If the heat is very high, water can disappear too quickly; lower it before the bottom starts catching.

Stir the whole coconut-milk can

Full-fat canned coconut milk often separates into a thick cream layer and thinner liquid. Mix them together before weighing the recipe portion. Using only the solid top gives a richer result and makes the retained average profile less representative. Coconut beverage from a carton is not the same product. Brand fat and sugar values vary, which is why the panel is explicitly an estimate and retains a named supplementary primary sugar source where the USDA record lacks that field.

Finish at a low uncovered simmer

After adding coconut milk, stir regularly down to the pan base and keep the heat low. The mixture should bubble gently and become creamy as the quinoa finishes softening. Stop while it is still spoonable; it thickens during the five-minute rest and again as it cools. A completely dry surface is not the target. Stir the measured maple syrup in after removing the pan from the heat so it is evenly distributed without an extra sticky layer cooking on the bottom.

Weigh prepared mango and divide evenly

Peel the mango and cut flesh away from the stone before weighing the edible cubes. A whole mango weight includes peel and stone and cannot substitute for the stated amount. Divide the porridge equally among four bowls, then distribute the mango evenly. The image and nutrition do not include coconut flakes, nuts or a second syrup drizzle. For make-ahead portions, store fruit separately when practical. Refrigerate cooked porridge promptly and reheat it thoroughly, stirring to eliminate cold pockets before adding the chilled fruit.

Common questions

Why does the porridge still have tiny firm grains?

Quinoa has more texture than oat porridge, but the centers should not feel hard. Continue the gentle finishing simmer as needed and check several grains. A very fast boil can remove liquid before the centers soften.

Can I use light coconut milk?

It changes the fat concentration and final body. The cooking approach may still work with adjustment, but the full-fat canned profile and published estimate would not describe that version. Check the product label rather than treating all coconut liquids as equivalent.
