Salmon, sweet potato & fennel packets
Skinless salmon steams in parchment over pre-softened sweet potato and fennel with lemon and dill.

Let’s make it
- Heat the oven to 400°F (200°C). Put sweet potato, fennel and measured water in a wide lidded skillet. Cover and steam over medium-low heat for 10-12 minutes, stirring once, until the slices bend and a knife enters with slight resistance. Retain any pan liquid.
- Prepare four large parchment sheets on two baking trays. Divide vegetables and liquid equally among them. Set one salmon fillet on each mound. Divide oil, lemon juice, dill, salt and pepper equally over the packets.
- Fold each parchment sheet over the food and crimp the edges tightly, leaving a little room for steam. Bake for 15-20 minutes. Open a packet carefully away from your face and measure the thickest center: salmon must reach 145°F (63°C), and the vegetables should be tender. Reseal and cook longer if needed.
- Stand for 3 minutes, then open away from hands and face to avoid steam. Serve one complete packet per portion, including its juices. Refrigerate leftovers within 2 hours, use within 3-4 days and reheat to 165°F (74°C). Do not use parchment under a broiler or against an oven element.
